Jalapeno Pepper Jelly

Put gloves on!

3 Green Bell Peppers
1 Cup Fresh Jalapeño Peppers (I take the seeds out of all but a few)
1 ½ cup distilled white vinegar
6 ½ cup sugar
1 bag liquid pectin (there is two in a box)
-Chop peppers in food processor
-In a pot combine chopper peppers vinegar, sugar.
-Stir until boiling
-Stir in pectin
-Boil 5 minutes longer
-Skim foam off the top
-Ladle into jars
-Process for 5 minutes.

Serve with cream cheese and club crackers!

First day of school! First Day of School! I feel like we have great teachers this year for Ashlee and Zachary. They woke up before I did. I could hear them singing to ABC, 123 by Micheal Jackson. I made them blueberry pancakes with their favorite home aide syrup. I took them to their classroom, gave them a hug, and that was that! I can't believe another year is starting. They both are excited though and ready to conquer the world! Michelle and I are headed out the door right now to go pick them up and I am soooo excited to see how it went.

Provo and Benjamin 5K

Since Amy and Travis have been visiting from Georgia, we have been able to run in a couple races with Stephen (my very fast nephew). I get very nervous before the game, and the fist mile is always a killer, but I love coming across that finish line. I have finished in the 26th minute in both races. I am so glad the didn't wake up at 2am like they did last year. This time it was more like 8am. Ashlee was delighted to find her very own digital camera and a bunch of horse stuff, clothes, and Bakugons, and some Wii games.

Zachary thought for sure that for sure that Santa would forget about the Bakugons. He was sooo excited to see them on Christmas morning. He also was suprised to find a bike, skate board, and some Wii games.

Michelle was LOVING every second of whatever was going on. And I don't know what Chloe the dog thought.

Darron is the king of KSL classifieds. He has bought all of his fun toys off ksl. Its almost a hobby for him. These were our latest deal we found for the kids. They weren't working when we picked them up, but D did some fine tuning and now they work like they are brand new. The kids LOVE to ride. The mom just lets the dad watch them, becasuse she is a nervous wreck when they are zooming around in the snow.

After we were at the Sand dunes for a couple days, we went up to Scofield. We were dissapointed for find out that there aren't any camping spots up around the lake. The only one we could camp on was the designated ones. Oh well. The stars were SO bright that night. We walked down to the lake in the dark and then watched Nanny McFee in the camper before we went to bed. On the way home we stopped off at Soldier Summit to go on a 4 wheeling ride. There were SO many hunters up there. We were all exhusted when we got home.

Wanted to let everyone know about our frightening experience yesterday.

At lunch time we were turning around at a park close to our apartment. As we were pulling out, there was a high hedge and we were both looking left to see if we could pull out. We heard a big crash and thud. I screamed as I looked up to see a person on our windshield and a bike on our hood. A young Korean exchange student was riding down the sidewalk on a hill hurrying to class. Because of the hedge we never saw him and he never saw us. He must have been going pretty fast when he slammed into us. I thought he was dead. My heart was pounding. After he was flung onto the ground he got up. I got out of the car to see if we needed to call an ambulance. He said he was alright but I could tell he was in pain. He wouldn't let us call an ambulance or take to to the hospital. Our mint condition car got several dents and paint from his bike. A man in the park came over and told us we should call the police and file a report to get our car fixed.

It was obvious the young man would not be riding his bike because it was too damaged and he kept grabbing his legs. When the man told us he witnessed the whole thing and it wasn't our fault because in Hawaii it is against the law to ride a bike on the sidewalk and against traffic which he was doing both the Korean kid got tears in his eyes. He said he didn't want to get sent back to Korea because he is just an exchange student and if he caused any trouble he would be sent home. I told him if the police told us it would get him in trouble we wouldn't file the report. When the police got there the first thing he said is he would have to issue him a citation for not having his bike registered. Hyngjun (his name) didn't know his bike needed to be registered.

We could see the guy was upset (probably because of the pain, his ruined bike and it was apparent he was very afraid of being sent home). We told the police we weren't going to have him report anything and the kid was very happy and humble (bowing saying he was sorry).

A guy who works at the park told us he just picked up a bike off the street to fix for his daughter. When he brought the old bike out of the shop, it was the same brand as the Koreans bike. Neither one of them was rideable. Because he can't miss classes or be tardy without being sent home, Dad told him we would drive him to class and Dad would come back and fix the bike. It took Dad and the nice man at the park several hours to make one bike out of the two. They finished about an hour before he called us when he was finished with all his schooling for the day. The back brakes didn't even work so we aren't sure if he just didn't see us or couldn't stop. When we picked him up, he was very happy to have a bike even though it was pink and blue. Dad called his school today and explained why he had missed the one class.

While we were taking him to his school (about 3 miles from the accident) I asked him what religion he was. He said he didn't have any beliefs. His Mom is Buddist and his father doesn't believe in any kind of God. He has a wonderful spirit and we felt we should stay in touch. When I invited him to dinner next week, he said "no, I need to cook dinner for you". Dad reminded him today to get his bike registered and he is coming to dinner on Tues. Hopefully, he will want to learn about the Gospel and if not he is a nice person to be friends with. What a way to get a contact!!!

Another part of the story is the nice man at the park said OH! Elder and Sister!!! We found out he is inactive because he wife is anti but she works on Sunday so Dad invited him to come to church with us while she is working. We love apple bananas. The are smaller and sweeter than regular bananas. They are even more expensive than reg bananas but we found some Sat for $1 a pound and tried them. He (Patrick) has a tree in his yard and is bringing us some tomorrow. So we are hoping to get him back out to church and get Hyngjun to take the discussions. We have a Korean missionary (Elder Choi) in our ward. He is the one who baptized Andrajit, the young man from Sri Lanka who we took a picture with and sent to you already. So Elder Choi can speak to him in Korean and English if we get that far. Say a prayer.

I am still amazed at the strength of the people from so many different countries. We had Bro. Mills (second counselor to our Bishop from Emery County Utah) play the piano and our Gospel Doctrine teacher play the violin Sunday. No one wanted it to end. They played "A Poor Wayfaring Man". After church, I asked Sister Reeves how long she had been playing. About as long as Jessica. She makes a living playing with the Symphony here. Wish I could send you a recording of that.

Tomorrow is transfers at the tabernacle. We were invited to go to that. The other seniors said it is one of the most spiritual meetings we will ever attend while here. I am sure the young missionaries coming in are just as nervous as we were. We will let you know about that.

We love you all and miss you! Give our sweet grandchildren hugs and tell them they are from us.

Here are some of the pictures that we took while we were down at Bolder Mountain. We stayed from Teusday to Saturday... and I could have stayed for another week. It is one of the prettiest places I have ever been to. There are mountain lakes everywhere that are surrounded by aspens and pines. We stayed at a campground that had water. It was convenient, but next time I think we are going to camp more primitive. The camp host that was there was a beast and let Darron have it! I watched her yell and yell at Darron about the dog without a leash, starting up the 4wheelers in the campground, and cutting wood with a chainsaw. Our favorite spot that we saw was up at Miller’s Lake. Our friends the Carr’s and the Galacher’s were also up there. Bro. Carr made some awesome tacos one night for us. And he fried up some fresh trout for us another night.

I took these shots our last morning there. The kids were sad to go and so was I.

She was so MAD and thought that the people fishing on the other side of the lake took all the fish out. Finally she casted in and pulled one out.

For those of you that don't know who Almulek is... he ends up changing his life and becoming one amazing missionary.

Darron just read that this morning. Funny that the word "rebelling" is in the same verse. We REBELLED against England for our independence.

ANYWAYS...

We had a great fourth. It started at 5am and ended at midnight. We woke up and met Steve, Mickey, Jared, Stacy and Porter at the hot air balloons. Then we met everyone at the parade. After the parade we barbequed and played at thepark for about 6 hours! We came prepared withgood food and water toys. I got to play some tennis and some of us played some sand (ok, gravel) volleyball. Everyone had a good time...

I just want send a shout outto all those military soldiers and their families. I couldn't help to think that while I was enjoying my favorite holiday of the year... there are Americans in other lands keeping thepeace or trying to make peace. I am so grateful for their service and everything they do so we can all have our freedom here.

Baked Beans (to die for)

4-5 cans Campbell's pork and beans
4 Bacon Strips cut up and nuked in microwave (or 1/2 cup ham)
1/4 cup grated onion
1 can drained pineapple tidbits
1/4 cup catsup
2 squeezes of mustard
1/2 cup brown sugar

for best results heat thoroughly in crock-pot for 2 hours.

So, we celebrated Darron's birthday last week. Yes ,he does not like to celebrated his birthday. He didn't want to do anything or spend anything. BUT we just couldn't let that happen. When he woke up that morning we surprised him with a birthday card and 4 tickets to the Orem Owlz baseball game.

The kids made him a huge sign that read "Happy B-day Daddy" and hung it on the wall. And I made my first ever birthday cake that was not in a casserole dish. He wasn't expecting his family to be there. But everyone that could show up came Friday afternoon to sing him happy birthday and eat cake and icecream. He had no idea that they were coming.

I can't express how much I love Darron. I married the man that nobody thought existed. He is perfect for me and for my kids. I LOVE that he tries SO hard to do what is right. He keeps us laughing and happy all the time.

The Camp Out

My Family and I went camping. We saw a road we thought that was the right road but it wasn’t. We had to back up and that wasn’t good but we did it. We were safe. My dad went to find a camp out and he found one. I went for a hike. I was coming back when I saw a horse it scared me to death. I zoomed to my mom. I shook with scare. Then my dad came back. He found a spot. We went to it. Zachary and I skipped rocks. It was night. We went to bed.

The next day we went four wheeling. We saw the view. When we were going back a hawk flew past. It was going to get my dog. Then we say a badger. My dog was face to face with a badger! When we got back my uncle was here. My brother and I climbed up a big hill and made it. Our uncle came to get us then we left. The end.

Yup! 5 years old! This year we celebrated Zachary's birthday at the same park we have for the past 3 years. Every time we drive past the park he tells everyone "There's my birthday park!" It wasn't the best weather, but we tried to make the best of it. It was windy so we brought some kites to fly. Thanks to all my family and Darron's who came and supported him. Zachary has the BIGGEST heart. He is always looking out for his big sister. And now for his little sister. He was a bit upset when we found out we were having a girl, but it is so cute to see him take care of her. Zachary is so good at whatever he does. He loves to play soccer, jump on the trampoline, play in the backyard with the fam, he is always wanting to have fun. He is such smart boy too. He is already reading and trying to sound out everything he sees. As I am typing he is playing peek a boo with Michelle and making her giggle. What as sweet boy. ... what a lucky mom!

Ashlee turned 7 on April 27th. We had planned to have a party at the park but it rained. Instead we went down to the church to play kickball in the gym. We had the WHOLE family here. My side and Darrons. Ashlee felt loved to say the least. I love my Ashlee. She has always been a great helper. This morning she noticed that my bathroom floor needed sweeping...so she just did it. Ashlee loves being around her family and having fun. Her favorite thing to do is jumping on the trampoline with her dad and her brother, tackle time, going down to the gas station or the Red Barn for a treat, making anything in the kitchen with mom, She also loves hanging out with her cousins. She is a fast learner too. I showed her a few chords on the guitar and she picked it up really quick. She loves soccer, but mostly she loves to play soccer with her family in the backyard. She loves playing with her brother Zachary. I am so glad that they get along so well. Zachary really looks up to her, and I am glad the she is a good example for him. How did I get so lucky to have her as my daughter... I don't know, but I'm so glad she's mine.

Wow where has the time gone. I thought I would post some pictures of my kidos before they get any older. Summer is officiously here. I am so excited. Chores have begun too. So the rules are: family prayer, scriptures, chores, breakfast, and then they can play. We have also managed to memorize a few states on the map. If they do a good job all week, then we will do something fun on the weekend. We are going to go stay up in Salt Lake this weekend and go to Pioneer Village and the Zoo.

Michelle is changing everyday. She loves to grab things ex specially her feet and my hands. As I am typing she is grabbing at my hands.

My heart is exploding with gratitude to my Heavenly Father today. I still have my Zachy. I can’t help to think about all the “what if’s”. What if…. The car would have gone done the cliff… Zach would have fallen out with the car on top of him. What if… in the CAT scan they would have found internal bleeding. What if my nephew, Porter that was over was behind the car? What if Stacy, who is in cast and on crutches, was behind him when she was hobbling out to her car? What if I tried to stop the car? It could have been SO much worse. I also can’t help but think about the little kid that was in the news yesterday that crawled under his uncles truck to get a toy right when his uncle jumped in and accidently ran over and killed him. I have the best little boy in this world. For some reason, Heavenly Father trusts me to raise him an teach him what he needs to know so he can grow up and serve and do what he Heavenly Father needs him to. There is no doubt that He has a plan for Zachary. I am so thankful to be his mom. AND I’m so thankful that we still have our Zachy!

It all happened so fast. I was attmepting to stop the car until Darron yelled at me to get out of the way. Jared tryed twice to stop it, but quickly found out it was going to fast to stop. Then he new he needed to get Zachary out of the car before in ran of the edge. While Jared was pulling Zach out.... well, I don't know how it all happend but Z ended up betwwen the door and the big green electrical box that he is now standing on in the picture.

This speaker box is the pattern that is on Zachary's arm and Uncle Jared's leg.

Heavenly Father was watching out for us last night.

We are so blessed to have Zachary with us. Yesterday he jumped in in the car (passenger side) to grab a pack of bubble gum.

Next thing he new he was rolling down the driveway backwards, heading for the dropoff that is accross the street from us.

Luckily, when the car hit the curb across the street, it turned the wheels and it crashed into the big green electical box.

Michelle is always sucking on her knuckles. I have been trying to keep her from sucking her thumb, but she is persistent. She spits out the bink and in goes the hand. The band aids on her thighs are from her shots she got yesterday. It was so sad.

Michelle is such a good baby. She has been so fun to have in our family. You can alway count on her to make you smile. She LOVES Zach and Ash. As soon as the big sister and brother her in the morning they are the first ones to welcome her to a new day. They love to hold her and be with her. She had her two month old check up yesterday. She is now 11.9 pounds (55th %), and 25 inches (98th %). And health as can be. Lately she has been outside a lot watching us work out in the yard. She really enjoys being outside, just like the rest of us.

Here are my cute kids... I can't believe we have three now! This was taken about a week ago.

We blessed Michelle on Easter Sunday. As you can see... she looked beutiful. We had a lunch afterwards and then an Easter Egg hunt after lunch. Lisa and Stacy made cookies and frosting for the kids to color Easter eggs.
